TABBOULEH SALAD

 

Tabbouleh has been my all time favourite salad for as long as I can remember. The freshness of the parsley combined with zingy lemon makes this recipe the star of the show when it comes to summer time lunching.

INGREDIENTS: Serves 4   Level: Fabulously easy

  •  2 cup Quinoa
  • 1/2 Red onion
  • 2 cup diced Tomatoes
  • 2 cup finely chopped Lettuce
  • 2 cup diced Cucumber  1 cup
  • 90 g finely chopped Parsley
  • 1 tbsp Olive oil
  • Fresh Lemon juice of 1 lemon

METHOD

  • Cook Quinoa in boiling water on hob for 15 minutes on medium heat
  • Whilst Quinoa is cooking chop finely your Onion, Tomatoes, Lettuce, Cucumber and Parsley
  • Once Quinoa has cooked, drain and leave to cool slightly for around 10 mins.
  • Once the Quinoa has cooled add all your chopped ingredients and mix
  • Then squeeze over your fresh Lemon and drizzle over Olive Oil and mix well.
  • Serve. (I like to put a huge dollop of hummus on the top of mine!)
