Tabbouleh has been my all time favourite salad for as long as I can remember. The freshness of the parsley combined with zingy lemon makes this recipe the star of the show when it comes to summer time lunching.
INGREDIENTS: Serves 4 Level: Fabulously easy
- 2 cup Quinoa
- 1/2 Red onion
- 2 cup diced Tomatoes
- 2 cup finely chopped Lettuce
- 2 cup diced Cucumber 1 cup
- 90 g finely chopped Parsley
- 1 tbsp Olive oil
- Fresh Lemon juice of 1 lemon
METHOD
- Cook Quinoa in boiling water on hob for 15 minutes on medium heat
- Whilst Quinoa is cooking chop finely your Onion, Tomatoes, Lettuce, Cucumber and Parsley
- Once Quinoa has cooked, drain and leave to cool slightly for around 10 mins.
- Once the Quinoa has cooled add all your chopped ingredients and mix
- Then squeeze over your fresh Lemon and drizzle over Olive Oil and mix well.
- Serve. (I like to put a huge dollop of hummus on the top of mine!)
